Ingredients

  • 3 tablespoons Coriander seeds
  • 1 tablespoon Cumin seeds
  • 1 tablespoon Fennel seeds
  • 2 tablespoon Black Peppercorns
  • 15 Green Cardamoms
  • 3 Black Cardamoms
  • 1 tablespoon Cloves
  • 2 Cinnamon Sticks
  • 4 Dried Red Chilies
  • 8 Bay leaf (tej patta)
  • 1 teaspoon Turmeric powder (optional)

Instructions
 

  • Heat a dry skillet or pan over medium heat.
    2. Add 3 tablespoons coriander seeds, 1 tablespoon cumin seeds, 1 tablespoon fennel seeds, 2 tablespoon black peppercorns, 15 green cardamom pods, 1 tablespoon cloves, 3 black cardamoms, 2 cinnamon stick, 4 dried red chilies (if using) and 8 bay leaf to the pan.
    3. Toast the spices for a few minutes until they become fragrant and slightly darkened, stirring occasionally. Be careful not to burn them.
    4. Remove the pan from heat and let the toasted spices cooldown.
    5. Once the spices have cooled, transfer them to a spice grinder or mortar and pestle.
    6. Grind the toasted spices into a fine powder. Ensure that all the spices are ground evenly to achieve a consistent texture.
    7. Taste the masala and adjust the salt and spice level according to your preference.
