- ½ cup Coriander seeds
- ¼ cup Chana Dal (husked & split bengal gram)
- 1 tablespoon Urad Dal (husked & split black gram)
- 10-12 Dried Red Chilies
- 1 teaspoon Cumin seeds
- ½ teaspoon Black Peppercorns
- 3 Green Cardamoms
- 1.5 inch Cinnamon stick
- 3-4 Cloves
- 4 tablespoon Desiccated Coconut (unsweetened)
- 2 teaspoon Poppy seeds (khus khus), optional
- ½ teaspoon Fenugreek seeds (methi dana)
- 12-14 Curry leaves
- 1 teaspoon Asafoetida (hing), optional
Heat a dry pan or skillet over medium heat. Add 1/2 cup coriander seeds and 1 teaspoon cumin seeds.2. Roast it for a while and transfer it to a plate. Be sure roast it for approx 1-2 minutes otherwise it should burn.3. Now append 1 tablespoon urad dal & 1/4 cup chana dal and roast it.4. Add 5-7 dry red chilies, 1/2 teaspoon fenugreek seeds, 3-4cloves, 3 green cardamoms, 1.5 inch cinnamon stick, 1/2 teaspoon black peppercorns and 12-14 curry leaves.5. Append 4 tablespoons coconut powder unsweetened. Roast it until it turns golden brown in colour.6. Collect all the roasted spices in a table and let it cooldown.7. Grind the mixture into a fine powder. You may need to do this in batches if using a small grinder. After grinding, sift the powder to remove any coarse particles and achieve a smooth consistency.
