Sweet Vermicelli Recipe Card

Meethi seviyan is a sweet dessert made from whole wheat vermicelli, ghee, milk, sugar and dry fruits.

Ingredients

  • 1 cup Vermicelli Broken in small pieces
  • 2 tablespoon unsalted Butter or Ghee
  • 1 cup Water
  • ¾ cup Sugar
  • 2 tablespoon sliced Almonds
  • 4 Walnuts
  • 4-5 Raisins

Instructions
 

  • Melt the ghee in a heavy bottom pan over medium heat. Add vermicelli fry until golden-brown, this should take about 3-4 mins
    2. Add water. Increase the heat medium to high & bring it to boil. After water boils, reduce the heat from high to medium & cover the pan.
    3. Cook till vermicelli become soft & water gets absorbed but not dry. If vermicelli gets dry, add 1-2 spoons water before adding sugar as it will become hard after adding sugar.
    4. Add sugar, raisins, crushed almonds & walnuts (save some almonds & walnuts for garnishing).
    5. Mix it well & cook for 3-4 mins over medium heat. Turn off the heat, cover the pan & let it sit for at least 10 mins before serving.
    6. Serve sweet vermicelli warm, garnish with almonds & walnuts.

Notes

Few tips for making sweet vermicelli
You could double or triple the recipe if you need more quantity.
Allow the seviyan to absorb the milk and become dry. Otherwise it would taste more like kheer.
If you like seviyan kheer then add more milk.
Dry fruits of your choice can be added. If you like it more, adjust quantities accordingly.
Once the milk is absorbed by the seviyan switch off the gas otherwise the vermicelli would taste dry.
