Ingredients

  • 5-6 medium sized Tomatoes (roughly diced)
  • 1 tablespoon Oil
  • 1 medium sized Onion (chopped)
  • 1 tablespoon Garlic (chopped)
  • Salt to taste
  • ½ teaspoon Black Pepper
  • 1 tablespoon Sugar
  • 1 litre Hot Water
  • ½ cup Capsicum (diced)
  • ½ cup Red Bell pepper (diced)
  • ½ cup Yellow Bell pepper (diced)
  • ½ cup Sweet Corn
  • ½ cup Raw Macaroni
  • 1 tablespoon Cornstarch
  • 2 tablespoon Water
  • 1 teaspoon Organo
  • 1 teaspoon Red Chili flakes
  • 1 teaspoon Fresh Basil (chopped)

Instructions
 

  • Take a blending jar, add the tomatoes and some water or as required.
    2. Blend them to form a puree. Make sure that the puree should be thin and smooth otherwise it would be difficult to strain.
    3. Strain the puree through a sieve as the thick particles will get separated.
    4. Now the filtered smooth puree is ready to use.
    5. Now to make soup, take a wok and  heat up the oil, add onion and garlic and saute for a minute.
    6. Further, add the tomato puree, add salt as per taste, black pepper powder and sugar. Cook and bring it to a boil.
    7. Add hot water to the tomato mixture, add all the vegetables and raw macaroni. Cook for 8-10 minutes or until macaroni is cooked.
    8. Now add the cornstarch and water mixture and cook until the soup thickens. Cornstarch helps the soup to get thicker and will become a good texture of soup.
    9. Finally append oregano, chilly flakes to elevate the flavor of the soup.
    Your Macaroni Soup is ready.

Notes

  • The amount of pasta you use may vary depending on how hearty you want your soup to be. Adjust the quantity of macaroni noodles based on personal preference, keeping in mind that they will absorb some of the broth as they cook.
  • Follow the instructions on the macaroni package for the recommended cooking time. It's best to cook the noodles until they are al dente (firm to the bite) since they will continue to cook slightly when added to the soup.
  • If you prefer a thicker soup, you can cook the macaroni directly in the broth rather than boiling them separately. This will allow the pasta to release some of its starch, which helps thicken the soup.
  • Taste the soup as it simmers and adjust the seasonings to your liking. Add more herbs, spices, salt, or pepper as needed to achieve the desired flavor profile.
