To Make Tomato Soup

  • Slice 500gm tomatoes and lay them in a pan.
  • Add 1 pod garlic and 1/4 onion on top of the tomatoes.
  • Drizzle with 3 tablespoon olive oil, and season either 1/2 teaspoon salt or pepper.
  • Place into the pan and stir for 20-25 mins, until onions are cooked through and soft. It’s going to smell so good!
  • Remove from the pan and let the dish rest for 10 mins before handling. It’s going to be very hot!
  • Carefully transfer the tomatoes, onion, and garlic with the juices in the pan to a blender. You may have to do this in two to three batches, depending on how large your blenders are. Blend for about a minute, or until the soup is creamy and smooth. carefully, remove the lid and pour into serving bowls when ready to serve.

To Make  Cheese Sandwiches

Spread butter on the inside of 4 bread slices. Add the cheese and place the buttered bread on top to sandwich. (Butter on the inside, mayonnaise on the outside).

  • Toast on each side of bread for about 2-3 mins on medium heat.
  • Repeat with remaining cheese sandwiches.

 

Optional Add – Instruction

  • Garnish the soup with grated parmesan cheese to give it a depth of flavor.
  • When it’s time to blend the soup with a few sprigs of favorite herbs.

Ingredients

For Tomato Soup

  • 500 gms Ripe Tomatoes (about 6)
  • ¼ Yellow Onion
  • 1 pod Garlic
  • 3 tablespoon Olive oil + extra for drizzling
  • ½ teaspoon salt
  • ½ teaspoon Pepper
  • 4 tablespoon Heavy Cream (for drizzling)
  • Basil leaves for garnish (optional)

For Cheese Sandwich

  • 4 slices Bread
  • 4 tablespoon Butter (salted/unsalted)
  • 2 slices Cheese

Instructions
 

  • 🔘Fresh Tomatoes: Even though this soup can be made with canned tomatoes. This recipe is emphasizing on this seasons harvest.
    I'm using 500 Gms of Roma tomatoes (that's about 6 tomatoes) because they're favourite for me.
    🔘Yellow onion : Yellow, White or sweet onion will work.
    🔘Olive oil :Add to the tomatoes for roasting and also for drizzling the top of the soup before serving.
    🔘Salt and Pepper:  As per taste.
    🔘Heavy Cream: For drizzling
    Ingredients You Will  Need To Make The Cheese Sandwiches                                    
    🔘Bread :Any bread can work for cheese, really , Gluten-free, Whole Wheat... I'm using a sliced white bread loaf for these cheese sandwiches.
    🔘Salted Butter:  Spread the inside of the bread slices with butter before adding the cheese slice.
